I think they look for how you react when they put you into those 'on the spot' situations like having to peel potatoes in your suit, and for good reason since as a manager you will constantly be doing things that don't 'seem like your job' but need to be done, i.e. wash dishes if the dishwasher calls in sick that day. It's one of the better parts of the company culture that anyone can jump in at any time to do any job, and is the main reason I went to them for their training program.
